How do you assist students at COA? 
I provide a real world account of what a student would find in the average restaurant. I use scenarios that I have lived through and witnessed to get my point across. I like to use much of my class time providing demonstrations and I encourage students to use the technology on their phones and capture the demonstration for later use. Starting in the fall the culinary arts class will use a greenhouse to grow vegetables for lab projects. Students will learn how to identify when a vegetable is at its peak of perfection. We will also compost all vegetable scraps so they may be returned back to the greenhouse as soil. As the semesters progress students will have the opportunity to cook for and serve members of the local government and other community leaders as an ongoing effort to expose students to the public before they graduate from COA. In closing I like the class to have fun while they are working as the old saying goes “enjoy what you do for a living and never work a day in your life”.
